CAULIFLOWER SALAD

Summertime signals the time for back yard barbeques, house parties and all other types of warm weather gatherings. A staple side dish is potato salad. Unfortunately, potato is synonymous with carbs. For those with diabetes it can put quite a damper on things.

This recipe offers a refreshing alternative, and when put together right, offers your tastebuds a tasty delight.


INGREDIENTS


1 large head of cauliflower cut into bite sized pieces

3 hard boiled eggs, shelled and diced

1 cup of mayonnaise

1/2 cup of celery diced

1/4 cup of red onion diced (I used a sweet onion)

1/4 cup of cooked bacon, chopped

1 tablespoon Dijon mustard

1 tablespoon of apple cider vinegar

1/4 teaspoon of paprika (more for garnish)

1/2 teaspoon of salt

1/4 teaspoon of pepper


DIRECTIONS


  1. Wash and cut cauliflower into bite sized florets

  2. Steam cauliflower until tender but still firm (5-7 minutes)

  3. Once steamed, rinse under cold water to stop cooking process and let dry

  4. While cauliflower cools and dries, mix together eggs, celery, onion and bacon.

  5. Add cooled cauliflower and mix

  6. Mix together mayonnaise, mustard, apple cider vinegar, paprika, salt and pepper until smooth

  7. Pour over cauliflower mixture and mix gently until combined

  8. Use leftover paprika for garnish, cover and refrigerate

  • Total carbs: ~36 g

  • Fiber: ~12 g

  • Net carbs: ~24 g

Servings

As a side dish, this recipe would typically make 6–8 servings.

If divided into 8 servings:

  • Total carbs: ~4.5 g per serving

  • Net carbs: ~3 g per serving

If divided into 6 servings:

  • Total carbs: ~6 g per serving

  • Net carbs: ~4 g per serving


There is nothing wrong with bringing a dish to a gathering, even if you were not asked to. In the end, you are showing generosity and allowing others to taste something different while being a good steward to yourself.


Luke 6:38 tells us, "Give, and it will be given to you. A good measure, pressed down, shaken together and running over, will be poured into your lap. For with the measure you use, it will be measured to you."
