LOW-CARB BROCCOLI AND CHEESE CASSEROLE

A Family Favorite for More Than 30 Years
Some recipes become favorites because they taste good.
Others become favorites because of the memories they carry.
More than 30 years ago, my mother-in-law gave me a handwritten cookbook that she had carefully written herself. While it contained many wonderful recipes, this broccoli casserole quickly became one of our family's favorites.
My first husband, Robbie, had lived with type 1 diabetes since he was four years old, and this was one of the dishes we both looked forward to sharing. Every time I make it, I still think of him and of my wonderful mother-in-law, whose handwritten gift has been treasured for decades.
Today, my youngest daughter also makes this recipe, continuing a family tradition that began with her grandmother.
One of the goals of Faithful Steps is to show that living with diabetes doesn't mean giving up the foods and traditions your family loves. Sometimes, making a recipe a little more diabetes-friendly doesn't require major changes.
For this casserole, I made just one simple adjustment—I left off the buttery cracker topping. For those who still enjoy it, the crackers can easily be served on the side and sprinkled over individual servings instead. Everyone gets to enjoy the same meal while choosing what works best for them.
To me, that's what Faithful Steps is all about. It's not about taking away the foods we love.
It's about making thoughtful choices that help us enjoy family traditions while caring for our health.
I hope this casserole becomes a favorite around your table, just as it has around mine for more than 30 years.
INGREDIENTS
2 Tablespoons butter
2 Tablespoons almond flour
1/2 Teaspoon salt
8 Ounces of cream cheese (I use Philadelphia brand)
8 Ounces of crumbled blue cheese (I used Great Lakes)
1 Cup of almond milk (I make my own almond milk, but any will do)
20 Ounces of frozen chopped broccoli, cooked and drained (I use Great Value)
*Optional-1/3 Cup finely crushed Ritz Crackers (Increased carb count)
In a saucepan, blend together butter, flour, salt and cheeses. Add milk all at once.
Cook and stir until mixture gently boils
Stir in broccoli and place into 1 quart casserole dish (*and top with Ritz crumbs if using)
Bake in oven at 350 degrees for 30 minutes

Total Carbohydrates: Approximately 22 g
Net Carbohydrates: Approximately 21 g
*Adding the Ritz crackers increases each serving by approximately 5.5 g total carbohydrates and 5.3 g net carbohydrates.
