Low-Carb Rotisserie Chicken Street Tacos

Some days, I really do not want to cook—but I also do not want to eat foods that do not support my health goals. These Low-Carb Rotisserie Chicken Street Tacos are one of my easy solutions.

The chicken is already cooked, the vegetables add freshness and crunch, and the tacos take only a few minutes to assemble.


Enjoy them cold, or warm the tortillas, chicken, and cheese in the microwave.


Ingredients

  • 8 Mission Zero Net Carbs Original tortillas

  • 2 cups chopped or shredded rotisserie chicken

  • 1 cup Great Value Finely Shredded Mexican Style Cheese Blend

  • 1 cup shredded lettuce

  • 1 medium tomato, diced

  • ½ small yellow onion, finely chopped

  • Cholula or another hot sauce, to taste

  • 1 tablespoon Great Value Sour Cream per taco

    (8 tablespoons, or ½ cup, for the entire recipe)


Directions

  1. Place the tortillas on a microwave-safe plate.

  2. Divide the rotisserie chicken evenly among the eight tortillas.

  3. Add approximately 2 tablespoons of shredded cheese to each taco.

  4. If you want the tacos warm, place the tortillas with the chicken and cheese in the microwave. Heat for 20–30 seconds, or until the chicken is warm and the cheese begins to melt. If you prefer cold tacos, skip this step.

  5. Add the lettuce, tomato, yellow onion, and hot sauce.

  6. Top each taco with 1 tablespoon of sour cream just before serving.

  7. Fold and enjoy.
