SPINACH STUFFED PORK CHOPS

Entertaining can be difficult when it comes to eating low carb. You want a meal that is delicious for both you and your guests, but you also want to stay within your carb range. Cooking two different meals can definitely work but this dish combined with a side of riced cauliflower cooked in broth will have your guests genuinely asking for your recipe.


INGREDIENTS


4 thick boneless pork chops, about 6 ounces each

1 tablespoon olive or avocado oil

1 teaspoon Paprika

1 teaspoon salt, divided

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

4 ounces of softened cream cheese (I prefer Philadelphia brand),

1/4 cup grated parmesan cheese

2 tablespoons Mayonnaise

1 1/2 cups fresh chopped spinach

1 teaspoon garlic, minced

1/2 teaspoon red pepper flakes


DIRECTIONS


  1. Preheat oven to 375 degrees

  2. Place pork chops on cutting board and use a sharp knife to cut a pocket into the side of each one

  3. Drizzle the pork chops with the oil

  4. In a small bowl combine Paprika, 1/2 teaspoon salt, garlic powder, and onion powder then sprinkle evenly over both sides of the pork chops

  5. In a large bowl combine the softened cream cheese, parmesan cheese, mayonnaise, spinach, minced garlic, red pepper flakes and remaining 1/2 teaspoon of salt, mix well

  6. Spoon the spinach mixture into each port chop evenly, their pockets will be overflowing

  7. Place the pork chops in a 9x13 baking dish. Bake uncovered for 25 minutes or until pork is cooked to internal temperature of 145 degrees.

  8. Rest dish for 3 minutes before serving.


Each porkchop has a total carb count of 4gms, less the fiber count of 1 leaving a net carb of 3gms. I have served this dish several times and no one realized that it was low carb. I found this wonderful recipe on that lowcarblife.com and I know that they have many other savory recipes as well.
