INSTANT POT CHICKEN SOUP

Recipe Inspiration: I discovered the original recipe on Low Carb with Jennifer and immediately thought it looked delicious. After making it several times, I adapted it to fit our family's preferences by changing the vegetables, adjusting the seasonings, and including an easy lactose-free option. This is the version we love and make in our home.


4-5 Boneless, skinless chicken thighs

4 Cups of bouillon (I use Better than Bouillon, chicken)

1/2 Onion, diced, (I used a sweet onion)

2 Cloves of garlic, minced

1/2 Teaspoon dried Thyme

1/4 Teaspoon dried Dill

1 Cup of fresh carrots, large diced

1/2 Cup celery, large diced

1 1/2 Cups Broccoli florets

4 Ounces of cream cheese (For lactose free I used So Delicious plant-based cream cheese)

3/4 Cup heavy cream, (or coconut cream for lactose free)


DIRECTIONS


  1. Add the chicken, broth, onion, garlic, Thyme and Dill to instant pot. Set lid to seal and cook under high pressure for 10 minutes followed by a 10-minute natural (or slow) release. Release rest of pressure after 10 minutes by quick release

  2. Remove the lid and shred the chicken and return to instant pot. Add Carrots, celery and broccoli into instant pot. Set time for 1 minute. After times goes off, release pressure by quick release.

  3. Remove the lid and stir in cream cheese and heavy cream. Season to taste and serve.


There's something special about sharing a warm bowl of homemade soup with the people you love. Good food nourishes our bodies, but gathering around the table also nourishes our hearts.
