KETO GARLIC BUTTER SALMON

INGREDIENTS
• 1 pound salmon fillet, whole or cut into portions, skin on
• Salt, to taste
• Freshly ground black pepper, to taste
• 4 tablespoons butter, melted
• 1/4 cup finely grated Parmesan cheese
• 2 level tablespoons minced garlic
• 2 tablespoons freshly chopped parsley
DIRECTIONS
1. Preheat the oven to 350°F. Pour just enough of the melted butter into a metal baking pan or a glass baking dish specifically labeled broiler-safe to make a thin layer across the bottom.
2. Place the salmon in the pan, skin-side down. Brush the top of the salmon with the remaining melted butter.
3. In a small bowl, mix the Parmesan cheese, minced garlic, parsley, salt, and freshly ground black pepper until evenly combined.
4. Sprinkle the garlic-Parmesan topping mixture evenly over the salmon. Gently pat it down to form an even crust.
5. Bake for approximately 20-25 minutes, depending on the thickness of the fillet, until the salmon is nearly cooked through.
6. Switch the oven to broil. Broil for 2-5 minutes, watching closely, until the topping is lightly golden and the thickest part of the salmon reaches 145°F.
7. Remove the salmon from the oven, let it rest for 2 minutes, and serve.
BROILER-SAFETY NOTE: Oven-safe glass is not always broiler-safe. Use glass only when the manufacturer specifically identifies the dish as safe for broiling.
