Low-Carb Alfredo Sauce

This rich and creamy Alfredo sauce is made without flour or added starch. Enjoy it over riced cauliflower, low-carb pasta, zucchini noodles, spaghetti squash, steamed broccoli, or roasted cauliflower. It can also be used in casseroles or served with chicken, fish, or shrimp.
INGREDIENTS
• 2 tablespoons butter
• 1 level teaspoon jarred minced garlic
• 1 cup heavy cream
• ¼ cup freshly grated Parmesan cheese
• ¼ teaspoon black pepper
• Salt to taste, added at the end only if needed
DIRECTIONS
1. Melt the butter in a small saucepan over medium-low heat.
2. Add the minced garlic and cook for about 30 seconds, stirring frequently. Do not allow the garlic to brown.
3. Pour in the heavy cream and stir well.
4. Cook gently for 3–5 minutes, stirring frequently. Do not allow the cream to boil.
5. Add the freshly grated Parmesan cheese and black pepper.
6. Continue cooking over low heat, stirring until the cheese has melted and the sauce is smooth.
7. Taste the sauce before adding salt. Parmesan is naturally salty, so additional salt may not be needed.
8. Remove the pan from the heat. Allow the sauce to stand for a few minutes; it will thicken as it cools.
*HELPFUL TIP
Keep the heat low after adding the Parmesan. High heat can cause the cheese to clump or the sauce to separate. If the sauce becomes thicker than you prefer, stir in a small amount of heavy cream.
