Low-Carb Low-Lactose Alfedo Sauce

I created this sauce because my husband is lactose intolerant, but I still wanted him to enjoy a creamy chicken and broccoli Alfredo bake. He can tolerate butter and a small amount of feta, so I used those along with unsweetened almond milk, plant-based cream cheese, nutritional yeast, and plant-based cheddar.

This is a lower-lactose sauce, not a completely dairy-free sauce. Everyone’s tolerance is different. If you cannot tolerate feta, leave it out and use a little more plant-based cheddar instead.

INGREDIENTS

  • 2 tablespoons butter

  • 1 level teaspoon jarred minced garlic

  • ¾ cup unsweetened almond milk

  • 6 ounces plant-based cream cheese, cut into small pieces

  • ½ teaspoon garlic powder

  • ¼ teaspoon black pepper

  • 2 tablespoons nutritional yeast

  • ¼ cup crumbled feta cheese

  • 2 tablespoons plant-based cheddar cheese

  • Salt to taste, added only at the end if needed

DIRECTIONS

  1. Melt the butter in a medium saucepan over low to medium-low heat.

  2. Add the minced garlic. Cook for about 30 seconds, stirring constantly. Do not let the garlic brown.

  3. Slowly pour in the almond milk while whisking.

  4. Add the plant-based cream cheese. Whisk over low heat until the sauce is mostly smooth.

  5. Stir in the garlic powder and black pepper.

  6. Add the nutritional yeast, feta, and plant-based cheddar. Continue stirring over low heat until the sauce is creamy and the cheeses have softened or melted. A few small pieces of feta may remain.

  7. Taste the finished sauce. Add salt only if needed.

  8. If the sauce is too thick, add unsweetened almond milk 1 tablespoon at a time. If it is too thin, cook it gently for another 2–3 minutes. Do not allow the sauce to boil.

  9. Pour the warm sauce evenly over the raw cubed chicken and frozen broccoli before covering and baking.

*FETA-FREE OPTION

If you do not tolerate feta, omit it and use ¼ cup plant-based cheddar cheese total.
