Here’s How This Recipe Turned Out in My Kitchen

Serves 4

A simple one-dish meal made with chicken, turnips, onions, celery, and plenty of garlic.

Ingredients

2 boneless, skinless chicken breasts, cut into bite-size pieces

4–5 medium turnips, scrubbed well and cut into about ½-inch pieces (peel if desired)

1 large, sweet onion, cut into wedges

½ large red onion, cut into wedges

2 celery stalks, cut into 2-inch pieces

2 rounded teaspoons jarred minced garlic

2 tablespoons olive oil, divided

1 teaspoon garlic powder, divided

1 teaspoon onion powder, divided

1 teaspoon paprika, divided

½ teaspoon oregano, divided

¾ teaspoon salt, divided, or to taste

½ teaspoon black pepper, divided


Directions


  1. Preheat the oven to 400°F. Place the oven rack in the middle position.

  2. Place the turnips, sweet onion, red onion, and celery in a large bowl.

  3. Add 1 tablespoon olive oil and half of the garlic powder, onion powder, paprika, oregano, salt, and black pepper.

  4. Mix well until the vegetables are evenly coated.

  5. Transfer the seasoned vegetables to a large casserole dish and spread them out so they are not crowded.

  6. Place the chicken pieces in the same bowl used to mix the vegetables.

  7. Add the remaining 1 tablespoon olive oil and the remaining garlic powder, onion powder, paprika, oregano, salt, and black pepper.

  8. Mix until the chicken is evenly coated.

  9. Place the seasoned chicken evenly over the vegetables.

  10. Spread the 2 rounded teaspoons of jarred minced garlic evenly over the chicken.

  11. Bake uncovered at 400°F for about 30–35 minutes, without stirring.

  12. Check the thickest pieces of chicken with a food thermometer. The chicken is done when it reaches 165°F and the turnips are tender.

  13. Stir everything together just before serving.
