LOW-CARB HEARTY VEGETABLE SOUP

There's something comforting about a pot of homemade soup gently simmering on the stove. This Vegetable Cabbage Soup is one of those recipes that fills the kitchen with wonderful aromas and brings people together around the table.


Loaded with colorful vegetables, hearty white beans, and a flavorful broth, it's a simple meal that's both satisfying and nourishing. I especially enjoy making this soup when I'm taking a dish to a church potluck because it makes a generous batch, travels well, and is always enjoyed by family and friends.

INGREDIENTS


2 Tablespoons of olive oil

1 Large onion chopped (I used a sweet onion)

2 medium carrots, peeled and chopped

2 Stalks of celery, cut into inch lengths

1/2 Teaspoon Chili powder

Salt and Pepper to taste

1 Can (15 ounces) White beans, drained and rinsed

2 Cloves garlic minced (or 2 level Tablespoons minced garlic from a jar)

1 Teaspoon Thyme

4 Cups broth of your choosing (I used Better than Bouillon, vegetable)

2 Cups of water

1/2 Large head of cabbage, chopped

1 can (15 ounces) chopped fire roasted tomatoes

1 pinch of pepper flakes

2 Tablespoons freshly chopped parsley



DIRECTIONS


  1. Heal olive oil in large pot. Add carrots, onion, celery, salt, pepper and chili powder. Cook until vegetables are soft, about 5 minutes

  2. Stir in beans, garlic, Thyme and cook until garlic is fragrant, about 30 seconds to 1 minute

  3. Add broth and bring to a boil

  4. Stir in the tomatoes and cabbage. Simmer until cabbage is wilted, about 6 minutes

  5. Remove from heat, add pepper flakes and parsley. Season with salt and pepper to taste. Garnish with parsley
