Because I live in the Rio Grande Valley in Texas, I have learned quite a bit about Mexican food and really enjoy eating it. For a simple dish that is filling, delicious and low carb, try this recipe.
INGREDIENTS
For the Tostadas
4 low-carb tortillas
1 pound beef (ground beef, shredded beef, or finely chopped cooked roast)
1 teaspoon chili powder
1 teaspoon cumin
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
1 tablespoon olive oil (if needed)
Toppings
2 cups shredded lettuce
1 medium tomato, diced
¼ cup diced onion
1 avocado, diced
½ cup salsa
½ cup sour cream (served on the side)
Instructions
Prepare the tortillas
Preheat oven to 375°F.
Place low-carb tortillas on a baking sheet.
Lightly spray with cooking oil.
Bake for 6–10 minutes, turning once, until crisp. Set aside to cool.
Skillet/Frying Methods
Heat about ¼ inch of oil in a skillet.
Fry the tortilla for about 30–60 seconds per side until golden and crisp.
Drain on paper towels.
Cook the beef
If using ground beef, brown it in a skillet and drain excess fat.
Add chili powder, cumin, garlic powder, onion powder, salt, and pepper.
Stir and cook for 2–3 minutes.
If using leftover roast or shredded beef, warm it with the seasonings.
Assemble
Place a crispy tortilla on each plate.
Top with beef, lettuce, tomato, onion, avocado, and salsa.
Serve with a dollop of sour cream on the side.
