LOW CARB TOSTADAS WITH BEEF

Because I live in the Rio Grande Valley in Texas, I have learned quite a bit about Mexican food and really enjoy eating it. For a simple dish that is filling, delicious and low carb, try this recipe.


INGREDIENTS


For the Tostadas

  • 4 low-carb tortillas

  • 1 pound beef (ground beef, shredded beef, or finely chopped cooked roast)

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and pepper to taste

  • 1 tablespoon olive oil (if needed)

Toppings

  • 2 cups shredded lettuce

  • 1 medium tomato, diced

  • ¼ cup diced onion

  • 1 avocado, diced

  • ½ cup salsa

  • ½ cup sour cream (served on the side)



Instructions

  1. Prepare the tortillas

    • Preheat oven to 375°F.

    • Place low-carb tortillas on a baking sheet.

    • Lightly spray with cooking oil.

    • Bake for 6–10 minutes, turning once, until crisp. Set aside to cool.

    • Skillet/Frying Methods

      1. Heat about ¼ inch of oil in a skillet.

      2. Fry the tortilla for about 30–60 seconds per side until golden and crisp.

      3. Drain on paper towels.

  2. Cook the beef

    • If using ground beef, brown it in a skillet and drain excess fat.

    • Add chili powder, cumin, garlic powder, onion powder, salt, and pepper.

    • Stir and cook for 2–3 minutes.

    • If using leftover roast or shredded beef, warm it with the seasonings.

  3. Assemble

    • Place a crispy tortilla on each plate.

    • Top with beef, lettuce, tomato, onion, avocado, and salsa.

    • Serve with a dollop of sour cream on the side.

(Using a typical low-carb tortilla with 4–5 net carbs)
