Simple Mushroom, Onion & Garlic Gravy


I have never been one for dry food. I love a good gravy, sauce, or a little butter to bring a meal together. This mushroom, onion, and garlic gravy is the kind of simple extra that can make steak, chicken, vegetables, or cauliflower rice feel much more satisfying.
INGREDIENTS
1 tablespoon olive oil
8 oz button mushrooms, cut in half
2 medium yellow onions, sliced
1 rounded tablespoon minced garlic
1½ cups beef broth
1 tablespoon Worcestershire sauce
½ teaspoon garlic powder
½ teaspoon onion powder
Black pepper, to taste
Salt, only if needed
About ⅛ teaspoon xanthan gum to start, adding only a tiny bit more if needed
DIRECTIONS
Heat the olive oil in a large skillet over medium-high heat.
Add the halved button mushrooms and sliced onions. Cook for about 8–10 minutes, until the onions are soft and the mushrooms and onions are browned. Stir occasionally so they have time to brown.
Add the minced garlic and cook for about 30–60 seconds, just until fragrant.
Pour in the beef broth and Worcestershire sauce. Stir in the garlic powder, onion powder, and black pepper.
Bring to a gentle simmer and cook uncovered for about 5–10 minutes so the gravy reduces and the flavor becomes richer.
While stirring or whisking the liquid part of the gravy, sprinkle in about ⅛ teaspoon xanthan gum very gradually. Let it simmer for about 1 minute before deciding whether it needs more. If needed, add only another tiny pinch.
Taste the gravy and add salt only if needed. Beef broth and Worcestershire sauce can already add plenty of salt.
Serve over steak, chicken, vegetables, cauliflower rice, mashed cauliflower, or other favorite dishes.
