SPAGHETTI SQUASH CASSEROLE

There are many steps to this recipe, but the work put into it is worth the outcome.
INGREDIENTS
1 Spaghetti squash, 2-3 pounds
1 Tablespoon olive oil
1 Teaspoon salt
1 Pound ground beef
24 Ounces Marinara sauce (or you can use the recipe called "Tomato Sauce My Way" on this website)
8 Ounces of Cream cheese
1/2 Cup Sour Cream
1 Tablespoon Chopped parsley (fresh or dried)
2 Cups Mozzarella Cheese
DIRECTIONS
Heat oven to 400 degrees
Place parchment paper on a rimmed baking sheet and spray with olive or avocado oil
Cut spaghetti squash in half, length wise, scoop out seeds and discard. Drizzle insides of both halves with olive oil and sprinkle with salt
Place squash, flesh side down, on baking sheet and bake for 1 hour or until fork tender
While spaghetti squash is in the oven, brown the ground beef over medium heat in a large skillet and drain the grease.
Add Marinara to pan, cook 5 minutes over low heat.
In a small bowl combine cream cheese, sour cream and parsley. Stir well
Remove spaghetti squash from oven and turn over. Use a fork to scrape flesh, scraping across the width of the squash.
Spray a 9x13 inch casserole dish with olive or avocado oil and put 1/2 of the squash meat into the dish. Top with 1/2 of the meat sauce and all of the cream cheese mix.4
Add the other 1/2 of the squash meat, the rest of the meat sauce after that and sprinkle with mozzarella cheese.
Bake for 20 minutes or until cheese is melted and dish is bubbly
I will suggest that a rimmed baking sheet be placed under the casserole dish as there may be some dripping.
